I have a friend who swears he can do this. I’ve met thousands of alcoholics. And I’ve NEVER met one who could do this. He won’t listen to me. Any suggestions on what to do?

Of course not. You aren’t a “recovering alcoholic” if you’re still drinking alcohol.
He really doesn’t believe he’s an alcoholic and he is not ready to quit. That means he has not hit his bottom. We can hope he does sooner rather than later but until then I would tell him this (whether you’re an alcoholic or not):
“_________ you have a serious problem and you need help. If you don’t want help, that’s your decision, but I can’t support it. If you decide you want help, I will be happy to take you to the hospital/rehab/AA meetings. Let me know what you decide.”
You have to do this with an alcoholic. I know it seems mean, but if you don’t and continue to hang around and watch him slowly kill himself, he will suck the life out of you and bring you down with him. You sure don’t want that.
And remind him………”Denial is NOT a river in Egypt.”
